Paleo "CousCous"

I suspect no one is particularly interested in my food babble of late, but I thought I'd share something I learned today. Cauliflower makes a great couscous substitute. I boiled frozen cauliflower for maybe 30 seconds and pulsed it in the food processor until it was couscous looking. I put it in the pan with chicken, olives, raisins, sundried tomato, cumin and turmeric and it was great. It would be better with slivered almonds, and the seasoning could probably be more elaborate, but I thought it was awesome. I was surprised by the fact that the mouth-feel was pretty much identical to real couscous. Bizarre. And delicious.

The photo was taken with my phone -- I'm not into food photography as you might now be aware.

Hey, I'm interested in your food babble! I'm very interested too since you are new to it, to see what changes you observe. I'm not terribly strict either, but try to keep the neolithic foods down.

Catching up on blogs here- Congrats on finishing Hundred in the Hood! That must be very satisfying! And with no blisters too! I'm not up for much these days either- trying to get over plantar fasciitis (seems to have come out of a foot injury last May and just won't leave!). It made a 50 miler (Firetrails) just miserable and slow. Hope your ITB issues are fading out too.

I have been concerned too by a paper posted about recently on the PaNu blog about marathoners who when tested had more atherosclerosis than a sedentary control group. He was attributing it to marathoning per se (what does that say about ultra runners? not so clear) as opposed to other forms of exercise, but it's possible it has more to do with the diet that runners adhere to than anything else. We'll have to wait for more data on that one though.

Great pictures and scenery, as usual! (Ted is cute!)

Thanks for the props guys. Cheryl, I'm interested in hearing what happened.

Cynthia, that's interesting. Don't know what that means exactly, but I am going to look it up!!! And thanks!

We're dabbling with at least a semi-paleo diet. We've noticed some issue with the gluten, so it may not be heartbreak to cut out those sorts of things. We'll be watching to see how yours is working!

Looks delicious! I could never give up dairy (mmm, cheese) for this Paleo thing though ;o) Hope it's going well for you.

Hi again. I'm having to cut back on the running because of plantar fasciitis-like pain. You do alot of stuff other than straight endurance running right? The crossfit type routines seem to be working well for you. Could you recommend some complementary routines or exercises to go with the running? I don't have a lot of equipment to work with, but we have short barbells.

Thanks!

Cynthia

Cynthia you could do squats, pushups, situps etc. as a circuit. If you have a bike you could put it on a trainer.

If you go to the Crossfit website there are videos showing you how to do different things. Play around there and try stuff out.

That's a real bummer about the PF. Such a nasty problem. I hope it clears up soon -- though winter isn't the worst time to be doing other stuff.

Thanks for the link. There's a huge list there- which do you recommend? Do you do the circuits for time too? Do you work out with a group?

I agree winter is a good time for these, but it's just getting good for running here (50's and 60's more often than 70's finally- don't we suffer here in the Bay Area?). I haven't stopped running completely, but really should cut back. Did a short run and some squats with weights and step-ups yesterday- not strong enough anymore! That probably means this is a good thing to be doing...
